The
Third Congress on Meat Production and Trade was held at
the Technological Laboratory of Uruguay (LATU) from November
23-24, 2004, and was organized by LATU, the Agricultural
National Research Institute (INIA) and the National Institute
of Meat (INAC).
The goal was to emphasize
the importance of integrating the “beef chain”
in Uruguay, strengthen the links within the market to build
dynamic competitive advantages and encourage sustainable
development of the sector. One of the issues discussed during
the conference was food safety. Dr. Mo Salman and Dr. David
Dargatz from USDA APHIS gave presentations on the importance
of epidemiology in food safety issues and the surveillance
systems in the U.S. and Uruguay prior to slaughter. Dr.
Andres Gil, from the Faculty of Veterinary Medicine in Uruguay
presented research that is being done jointly with USDA
APHIS on Epidemiology and Food Safety in Uruguay.
Other issues that were discussed during
the conference included: Animal Welfare, Competitiveness
and New Opportunities for Uruguay, Tendencies of the Ag-Food
Chains, and International Markets for Meat and Marketing.
A special presentation was made by Dr. John Houston, former
executive vice president of the U.S. National Cattlemen's
Beef Association, on Communication and Marketing to Increase
the Demand for Beef.
